Resumen: The relationships between refractive index and moisture content of honey and between viscosity and moisture content have been quantitatively investigated, and as a result it has been found possible to utilize each of these properties for the determination of the moisture content. The requisite tables have been drawn up and details of the methods given. The degree of accuracy attainable is equal to that of the standard A.O.A.C. method, while the procedure is in both cases simpler and more rapid.
