The effect of different wall materials (maltodextrin-gelatin, maltodextrin-alginate and maltodextrin-carrageenan) and different methods (spray-drying and freeze-drying) on microencapsulation of phycocyanin were investigated. Different combination (carbohydrate and protein) of types wall materials affected the phycocyanin level, encapsulation efficiency, moisture content, particle size, and the morphology of the microcapsule with the highest microencapsulation efficiency. The freeze-drying method could protect phycocyanin during the microencapsulation process more effectively than that by the spray-drying method. The effect of type combinations wall materials and the methods of two drying used in microencapsulation were determined the phycocyanin microcapsules physicochemical characterization. © 2023 Author(s).
